Quick, Light, Low-Carb Meal – RO*TEL Rescue

I bought some thinly sliced steak over the weekend from the “manager’s special” section of the butcher counter. It is, after all, my favorite section of the store. For various reasons I didn’t get around to using the steak until last night and when I opened the package it smelled kind of funky. There I stood, in my girlfriend’s kitchen with no steak and a pretty empty kitchen.

RO*TEL, tuna and cheese to the rescue!

1 can RO*TEL diced tomatoes and jalepenos

1 can tuna

1 oz colby jack cheese

microwave for 1 minute

Calories – 305
Protein – 33g
Carbs – 15g (12 net)
Fat – 10g

When I sat down to eat, my girlfriend said “that looks disgusting.” I just shrugged and started shoveling. It was heavenly.

    haha! This reminds me of a book I got for the hubs when we lived apart for 6 months. I think it was called “A Man, A Can, A Plan” pretty sure it was from Men’s Health Magazine and was reasonably healthy, and the recipes were all like this one!
